Blueberry Banana Bread

Last week I had a craving for banana bread at just the right time. Our banana's were in need of consumption or disposal. It was yummy and we ate it like there was no tomorrow. Then today, I woke up and met my husband in the living room. There was no 'Good morning' but rather 'Could you please make some banana bread with blueberries for breakfast?'. He had waited for me to wake up for at least two hours (I still haven't figured out why he was up so early) to ask me this.

And so, I thought since this is week 2 of making banana bread I'd share with you this bread my husband wakes up thinking about. I have used several different recipes over the last few years and kind of mix it up depending how much banana's I have. Here's my rough draft recipe that I have tweeked out.

Today I only had 2 banana so I added a little more blueberries and sugar (about 3/4 cup). I didn't even miss the 1-2 missing bananas. The banana flavor was still dominating. The blueberries did shine though. It was yummy. It is yummy. I have a slice right next to me and I keep going back in forth for more bites.


Blueberry Banana Bread
Ingredients
2-4 ripes bananas
Handful of blueberries
1/4 cup melted butter
1/2 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
Pinch of salt
1 1/2 cups all-purpose flour

Method
Preheat the oven to 350 degrees. With a fork, pour melted butter over bananas and smash with the back of a fork in a large mixing bowl. Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Coat blueberries with a little flour then fold into mixture. Pour mixture into a buttered 4x8 inch loaf pan. Bake for 1 hour or until a knife inserted comes out clean. Cool on a rack. Remove from the pan and slice to serve.
